Risotto with Fresh Vegetables

  • 1 c Mushrooms, sliced
  • 1/2 c Onions, chopped
  • 3 cloves Garlic, minced
  • 1 T Olive oil
  • 1 c Arborio (short grained) rice (can substitute long grain rice but risotto will be less creamy)
  • 2 cans (15 oz each) low sodium chicken broth, divided
  • 1 c Broccoli florets, steamed until crisp-tender
  • 1 c Peas, steamed until tender
  • 3 T Fresh basil, finely chopped (or 2 tsp. dried)
  • 2 T Fresh oregano leaves, finely chopped (1 tsp. dried)
  • 1/4 t Salt
  • 1/4 t Pepper
  • 1/2 c Parmesan cheese, grated

In large saucepan, saute mushrooms, onions and garlic in oil until crisp-tender, about 5 minutes. Stir in rice; cook 2 to 3 minutes. Heat broth to boiling in medium saucepan; reduce heat to low to keep broth hot. Stir 1/2 cup broth into rice mixture; cook over medium heat, stirring constantly, until broth is absorbed. Continue adding hot broth 1/2 cup at a time, cooking and stirring constantly until broth is absorbed, rice is just tender and mixture is very creamy. Stir in broccoli, carrots, peas, herbs, salt and pepper. Cook until hot through, 3 to 5 minutes. Stir in cheese and serve. Makes 8 (3/4 cup) servings.

Guilt-free Snacking

Orville Redenbacher's 100% Popcorn Mini Cakes
This tasty treat comes in seven great flavors including my two favorites Chocolate Peanut Crunch and Caramel. Its crunchy texture provides that satisfying feeling that make them a pleasure to munch. But the good news is, they come in at only 60 calories per serving (serving size-6 cakes), with a miniscule 0.5 grams of fat. Popcorn Mini Cakes are easy to snack on the go and priced at about $1.69 for a 3.5oz bag, making them a perfect inexpensive, healthful snack.
